Fettuccine Alfredo

A classic creamy pasta dish with a rich, buttery sauce.

1. Boil the Pasta (8–10 min)

  • Fill a medium pot with water (about 3 cups) and bring it to a rolling boil over high heat (~212°F / 100°C).
  • Add a pinch of salt and drop in the fettuccine. Stir occasionally.
  • Cook until al dente (~8 minutes, or as per package instructions).
  • Before draining, reserve 2 tbsp of pasta water. Then, drain the pasta in a colander.

2. Make the Sauce (5 min)

  • In a medium skillet, melt 1.5 tbsp of butter over medium-low heat (~250°F / 120°C).
  • Add 1/2 minced garlic clove and sauté for 30 seconds, until fragrant.
  • Pour in 1/3 cup of heavy cream and stir, letting it simmer for 1–2 minutes to slightly thicken.
  • Reduce heat to low and whisk in 1/3 cup of grated Parmesan cheese gradually until smooth.
  • Season with 1/4 tsp salt, 1/8 tsp black pepper, and a pinch of nutmeg (optional).
  • If the sauce is too thick, add reserved pasta water (1 tbsp at a time) for the right consistency.

3. Combine Pasta and Sauce (2 min)

  • Add the drained fettuccine into the sauce pan.
  • Use tongs to coat the pasta evenly with the sauce.
  • Simmer for 1 minute, then remove from heat.

4. Serve (1 min)

  • Plate the pasta and garnish with extra Parmesan and fresh parsley if desired.
  • Serve immediately while warm.
